Ingredients You’ll Need

  • 2 cups mixed dried fruits (raisins, currants, and chopped dates work beautifully)
  • 1 cup chopped nuts (walnuts or pecans add a lovely crunch)
  • 1 cup unsalted butter, softened (for a rich, creamy texture)
  • 2 cups granulated sugar (to balance the tartness of the fruits)
  • 4 large eggs (preferably at room temperature for better emulsification)
  • 3 cups all-purpose flour (for structure and stability)
  • 1 tsp baking powder (to give the cake a light lift)
  • 1 tsp ground cinnamon (for warmth and depth of flavor)
  • 1/2 tsp ground nutmeg (to enhance the festive aroma)
  • 1/2 tsp salt (to balance the sweetness)
  • 1/2 cup orange juice (freshly squeezed for brightness)
  • 1/4 cup brandy or rum (optional, for added depth and complexity)

For a lighter option, you can substitute half of the butter with applesauce. If you’re looking for a nut-free version, simply omit the nuts or replace them with additional dried fruits.

How to Make Never Fail Fruit Cake (Old-Fashioned Style)

Gathering Ingredients

Begin by assembling all your ingredients on a clean workspace. This step is crucial, as it allows you to visualize the process and ensures you won’t miss anything essential. Measure out the dried fruits and nuts, and chop them into bite-sized pieces if necessary. Prepare your butter by letting it soften at room temperature, making it easier to cream with the sugar later. Preheat your oven to 325°F (160°C) to ensure it’s at the right temperature when you’re ready to bake.

Creating the Batter

In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This process typically takes about 4-5 minutes and is vital for incorporating air into the batter, which helps create a light texture. Add the eggs one at a time, ensuring each is fully incorporated before adding the next. The mixture should appear smooth and silky. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the orange juice and brandy, if using. Stir just until combined; over-mixing can lead to a dense cake.

Incorporating Fruits and Nuts

Now comes the exciting partfolding in the dried fruits and nuts! Gently stir these into the batter, ensuring they are evenly distributed throughout. The vibrant colors of the fruits against the creamy batter are a feast for the eyes. This step not only adds flavor but also provides texture, making each bite a delightful experience. Be careful not to over-mix; a few gentle strokes should suffice.

Baking the Cake

Prepare a 9×5-inch loaf pan by greasing and lining it with parchment paper. Pour the batter into the prepared pan, smoothing the top with a spatula. Place the pan in the preheated oven and bake for 60-75 minutes, or until a toothpick inserted into the center comes out clean. The smell of the baking cake will begin to fill your kitchen, enveloping you in its warm embrace. Keep an eye on it during the last 15 minutes; if the top is browning too quickly, you can loosely cover it with aluminum foil.

Cooling and Storing

Once baked, remove the cake from the oven and allow it to cool in the pan for about 15 minutes before transferring it to a wire rack. This cooling period is essential; it helps the cake set and prevents it from becoming soggy. After it has cooled completely, wrap the cake tightly in plastic wrap and store it in an airtight container. This cake actually improves with age, so if you can resist the temptation, let it sit for a few days before slicing.

Slicing and Enjoying

When you’re ready to enjoy your Never Fail Fruit Cake (Old-Fashioned Style), slice it with a serrated knife for clean edges. Each slice should reveal a gorgeous array of fruits and nuts, a true testament to the love and care you’ve put into it. Serve it plain or with a smear of cream cheese frosting for an extra indulgence.

  • Ensure all ingredients are at room temperature for better mixing and texture.

Was sceptic at first because we re not fruit cake lovers but this one is a keeper! I infused the fruit in white martini and removed the access liquid before use. After baking i also fed the cake a miniature bottle of brandy divided in 2 times in a week before we ate it. I also covered it in marzipan and icing sugar paste the one you havecto roll put with a rolling pin. My sis thought it was shop bought!
